Shade grown coffee in the rich volcanic soil on the slopes of vocanoes Atitlan and Toliman in the higher altitudes of the world renown lake Atitlan coffee growing region.  This coffee is processed using the red honey method, which means it is dried over a 20 to 30 day period, under shade and is raked/moved every 20 minutes.  The coffee cherry is dried with the mucilage of the cherry still in tact which allows the bean to absorb more desired compounds that lend to it a syrupy body and additional sweetness.
